Ramadan is a month when you step out of your comfort zone and strive to do better in every way. This statement fits in every segment of day-today life, whether you try to pray harder and invest more time in reciting Quran or experiment some new finger-licking recipes in your kitchen.
I also find myself motivated to prepare some different and untried dishes during this holy month. Today’s share is a result of one of such trials when I was looking forward to make some box shaped snacks and boom, the thought to incorporate pizza taste in it entered my mind. Consequently, I came up with this hit item which I named as ‘Pizza boxes’. Everybody gave me a thumbs up as soon as they tasted these. Kids will also love this snack as most of them are fond of pizza and they would find it hard to resist 😉 . This can be a good option to go with in your hi-tea parties as well. The effort is worth it! About Pizza Boxes: Fusion of pizza and box shaped snack. Succulent pieces of chicken tikkas topped on pizza sauce, loaded with veggies and cheese oozing out as soon as you take a bite of the square shaped snack is definitely a treat to your taste buds.

GET:
Cutting Board
Knife
Bowl
Frying pans
Skillet
Cooking spoons
SET:
Chicken breasts 500 gms (cut in small cubes)
Marination Ingredients
Vinegar 2 tbsp
Red chili powder 1 tbsp
All spice powder 1/2 tsp
Ginger garlic paste 1 tsp
Black pepper powder 1/2 tsp
Orange food colour ¼ tsp (optional)
Salt 1 tsp
Cooking Ingredients
Oil 4 tbsp (for chicken) + 1 tbsp (for veggies)
Onion 3 large (diced)
Capsicum 3 (diced)
Thyme 1 tbsp
Oregano 1 tbsp
Coal (for steam)
Pizza Sauce Ingredients
Oil 3tbsp
Garlic paste 1 tsp
Tomato paste 1 cup
Tomato 1 medium (chopped)
Red chilli powder 1 tsp
Salt 1/2 tsp
Oregano 1.5 tsp
Ketchup 6 tbsp (about half cup)
Assembling & Frying Ingredients:
Mozzarella cheese (shredded)
Samosa patti/ Samosa leaves
Flour dissolved in water to seal the boxes
Eggs beaten
Bread crumbs
Oil for frying
GO:
Marinate chicken cubes with all the marination ingredients for about half an hour, fry them in oil until done and steam with coal afterwards.
In 1 tbsp oil, fry diced onions and capsicums with thyme and oregano until they are soft.
For pizza sauce: pour oil in a pan, add garlic paste when oil is heated and fry for 2 minutes. Then add all other ingredients and Cook for 2 minutes until the sauce simmers.
Time to assemble: spread pizza sauce over samosa leave, add few chicken pieces, place cooked veggies and load with shredded cheese before closing the box.
Shape them however you like, I made boxes. Seal them with flour mixture.
Coat the boxes in eggs and then bread crumbs.
Fry in medium hot oil until golden.
Serve hot.


MY TWO CENTS:
Adjust the spices to suit your taste buds.
You can use ready made tikka spices and pizza sauce.
You can skip the coating part with egg and bread crumbs if you want more crisp in bites.
