There are times when you really want to eat something special and different yet you don’t wanna spend too much time in kitchen hence the dilemma. For me, these times happen almost all the time ( yea, I am exaggerating a little… lol) and this leads me to google in search for different effortless and expeditious recipes. The one I am about to share today is one of such kinds, I stumbled upon this one by Delish while scrolling my Facebook news feed one day and I decided to keep it in my To-Try list immediately. I am so glad I did because it turned out to be super scrumptious, HI ended up asking for more as soon as he finished one (he usually eats one).
Ideal to serve these as a meal to kids who love to eat burgers over everything else. These will compliment your hi-tea menu as well. Try it and enjoy it 🙂
About Chicken Fajita: The word fajita is derived from Tex-Mex cuisine commonly referring to any grilled meat. It is usually cooked with onions and bell peppers topped with cheese and other seasonings which in turn make it irresistible.
The history of fajita dates back to 1930s in the ranch lands of South and West Texas. Many times, the fajita meat is brought to the table sizzling loudly on a metal platter with the tortillas and condiments.

GET:
Cutting Board
Knife
Big bowl
Skillet
Cooking spoon
SET:
Chicken breasts 400 gms thinly sliced
Marination Ingredients
Oil 2 tbsp
Lemon Juice 1 tbsp
Cumin powder 2 tsp
Chili powder 2 tsp
Paprika powder 1 tsp
Salt 1 tsp
Black Pepper 1 tsp (freshly ground)
Cooking Ingredients
Oil 1 tbsp
Onion 1 large (thinly sliced)
Bell peppers 4 (one of each color) (seeded and sliced)
Monterey jack cheese 4 slices
Burger buns
Mayonnaise to layer buns
Chopped Coriander leaves for garnish
GO:
Marinate chicken strips with all the marination ingredients for about half an hour
In hot oil, add bell peppers and onions and cook till they become tender.
Now introduce the chicken in pan, combine and cook until chicken is done (for about 10 minutes).
Add cheese and cover with a lid to let melt, for about 2 minutes.
Apply mayonnaise on both inner sides of toasted burger buns.
Serve cheesy chicken and peppers on burger buns
Garnish with coriander leaves and squeeze with lime.
MY TWO CENTS:
Adjust the spices to suit your taste buds.
Use extra virgin olive oil for better results.
You can make sandwiches with bread slices too.
Substitute monetery jack with cheddar or mozeralla cheese if it’s not handy.
