Pasta in Creamy Red Sauce

I have been a Pasta lover since forever and there are so many valid reasons for my fondness.

  • Less cooking time – Quick fix to hunger or when you are too lazy to cook
  • Easy to make
  • Tastes delish
  • Nutritious
  • No hard and fast rules

Yesterday when I was busy compiling that long post about Must See Places of Melbourne (you can check it out here, I have put alot of effort in compiling it and forcing you to give it a read/like/comment.. :p ); back to the topic, I wasn’t left with much time to cook. As always, Pasta came to the rescue. That is why I feel so deep affection towards it – saves me every time. ❤


About Pasta: A staple food whose history dates back to 1100s, usually cooked with chicken and veggies in some sauce (white, red or mix)

GET:

chef-hatSome bowls and spoons

SET:

chef-hatPasta 500gms

Veggies (cut into thin slices):
chef-hatCapsicum 1
chef-hatOnion 1
chef-hatCarrot 1
chef-hatGreen Shallots 2-3
chef-hatCabbage 1 small

Chicken Marination Ingredients:
chef-hatChicken Boneless 350 gms (cut in small pieces)
chef-hatGarlic Paste 1tsp
chef-hatSalt to taste
chef-hatBlack Pepper 1 tsp
chef-hatRed Chilli flakes/Crushed Red Pepper 1 tsp

Sauce Ingredients:
chef-hatGarlic crushed 2 tsp
chef-hatArrabbiata Sauce 400gms
chef-hatSoy Sauce 2 tbsp
chef-hatVinegar 1 tbsp
chef-hatOregano 1tbsp
chef-hatHeavy Cream 125 ml
chef-hatMozarella Cheese 250 gms
chef-hatOil 1/4 cup
chef-hatSalt to taste
chef-hatPepper to taste

GO:

chef-hatMarinate Chicken pieces in above mentioned ingredients.
chef-hatHeat oil in a wok, add crushed garlic and fry until it changes color to light brown.
chef-hatBoil pasta as per instructions on the pack, side by side.
chef-hatAdd marinated chicken and carrots to the wok.
chef-hatCover and let them cook for about 5 mins or till they get tender.
chef-hatAdd all the remaining veggies and cover for another 2-3 minutes.
chef-hatPour in Arrabbiata sauce, soy sauce, vinegar, oregano and stir the mixture.
chef-hatAdd cream to the mixture, let it simmer.
chef-hatTransfer boiled pasta in the wok, add in cheese and mix..
chef-hatAdjust salt and pepper, Serve.

MY TWO CENTS:

chef-hatIf Arrabbiata sauce is unavailable you can use tomato paste and red chilli peppers as substitute.
chef-hatGarlic paste can be used in case crushed garlic is not handy.
chef-hatYou can add or subtract any veggies you want.

Adjust the spices to suit your taste buds.
