Tarragon Chicken Pasta – Nikahversary Dinner!

Last week it was our 4th Nikah Anniversary and for a change, we did not plan anything special this year. Not because we did not want to but lots of things are going on hence an unplanned day. Though we wished each other at 12 midnight in a very innovative way (you must have read that post, if not then read it out here and have a good laugh :p).

As for dinner, I so wanted to keep my tradition of ‘trying-out-new-bomb-recipe‘ alive but I was not able to even think about dinner options because of lazy yet busy Ramadan routine. All thanks to Saima M. Vohra (one super mom in my newly made bunch of  UAE friends), who shared her family favorite recipe on our Whatsapp group. It definitely saved me from all the hassle of thinking about a quick, easy and yummilicious dish to grace the occasion.

Pasta is my all time favourite dish because of so many reasons (as you all know :)). I won’t make this post more boring by writing them down here again since I already have raved about those before (check ’em out here). Though HI is not an ardent Pasta lover (like me) but he likes whenever I make it and to this experiment his reaction was ‘Ummm Yummy‘ :D. Also, E loves to eat Pasta (her newly found love *nowadays*) so it was a win-win situation for all of us.

You can find this recipe over the internet as well since it is from Shireen Anwer (best chef everrr) but I have made some changes to the recipe, as always. Sharing my version below…

SET:

chef-hatPasta 300gms

Chicken Marination Ingredients:
chef-hatChicken Boneless 350 gms (cut in strips)
chef-hatGarlic Paste 1 tsp
chef-hatSalt to taste
chef-hatBaking Powder 1 tsp
chef-hatBlack Pepper 1 tsp
chef-hatVinegar 1 tbsp
chef-hatChili Sauce 3 tbsp
chef-hatSoy Sauce 3 tbsp
chef-hatMustard Paste 3 tsp
chef-hatOil 2 tsp

Tarragon Sauce Ingredients:
chef-hatWhipping/ Heavy Cream 500 ml
chef-hatGarlic Powder 1/2 tsp
chef-hatCream Cheese 2 tbsp
chef-hatTarragon (dried) 1 tbsp
chef-hatMustard Paste 1 tsp
chef-hatSalt to taste
chef-hatPepper to taste
chef-hatParmesan Cheese 250 gms

GO:

chef-hatMarinate Chicken pieces in above mentioned ingredients for about half an hour.
chef-hatFry the marinated chicken strips in little oil afterwards until they are done, set aside.
chef-hatBoil pasta as per instructions on the pack, side by side.
chef-hatFor sauce, introduce cream in a wok.
chef-hatAdd all other sauce ingredients except cheese and cook the mixture until it starts simmering.
chef-hatTransfer boiled pasta in the wok, add in cheese, cooked chicken strips and mix..
chef-hatAdjust salt and pepper, Serve.

MY TWO CENTS:

chef-hatGarlic paste can be used in case garlic powder is not handy.
chef-hatYou can use any kind of cheese (mozzarella/ cheddar) you want. I like Parmesan in pasta more.

Adjust the spices to suit your taste buds.
