Dynamite Chicken – PF Chang’s Sauce

PF Chang’s Dynamite Shrimp – this is such a mouth-watering-mood-lifter term! Don’t you guys agree? Ever since I have tried these, I have been searching for the recipe all over internet but no one has been successful enough to replicate the exact taste. However, recently I experimented a recipe after searching multiple blogs and sites. I didn’t have prawns at home the day I wanted to give it a try so i just made it with chicken, you can see the dish is not properly garnished as well (my bad). It turned out yummy, not exactly like PF Chang’s of course but quite close to it. Scroll down for step by step directions and enjoy the outcome!

: Fried spice-coated pieces of chicken/prawns served in a bed of sugary, tangy and zesty flavored sauce.

GET:

chef-hatCutting board
chef-hatKnife
chef-hatSome bowls and spoons
chef-hatSkillet/Pan for frying
chef-hatKitchen tissues

SET:

chef-hatChicken Breasts 500 gms
chef-hatOil for frying
chef-hatSpring onion (for garnishing – optional)

Batter Ingredients:
chef-hatAll purpose flour 1/2 cup
chef-hatCornflour 1/4 cup
chef-hatRice flour 1/4 cup
chef-hatGarlic paste 1 tsp
chef-hatSalt 1tsp
chef-hatBlack Pepper 1tsp
chef-hatPaprika powder 1 tsp
chef-hatSoya sauce 1 tbsp
chef-hatEgg 1
chef-hatCold Water as required

Coating Ingredients:
chef-hatAll purpose flour 1/2 cup
chef-hatCornflour 1/4 cup
chef-hatRice flour 1/4 cup
chef-hatSalt 1tsp
chef-hatPepper 1tsp
chef-hatGarlic Powder 1tsp

Dynamite Sauce Ingredients:
chef-hatMayonnaise 1/2 cup
chef-hatSweet Chili Sauce 3 tbsp
chef-hatHot Sauce 4 tbsp
chef-hatHoney 1 tbsp
chef-hatGarlic Powder/Paste 1/2 tsp
chef-hatVegetable Oil 1 tsp
chef-hatVinegar 1 tsp

GO:

chef-hatCut Chicken breasts in thin bite-size slices.
chef-hatMix all the batter ingredients in a bowl, add chicken pieces and set aside for 5-10 mins.
chef-hatMix the coating ingredients in a separate bowl, set aside.
chef-hatTransfer the chicken pieces from batter bowl to coating bowl, layer them well.
chef-hatIn a separate bowl, blend the dynamite sauce ingredients until smooth.
chef-hatHeat oil on medium flame until it is hot enough for frying .
chef-hatFry the coated chicken pieces until the colour changes to light golden.
chef-hatRemove excess oil by putting them on kitchen towel.
chef-hatTransfer the chicken pieces to serving bowl/dish and pour the dynamite sauce over them.
chef-hatGarnish with spring onion (optional) and serve.

MY TWO CENTS:

chef-hatYou can use the same recipe with prawns and fish. My next try is definitely gonna be with prawns.

If you don’t have sweet chili sauce; you can use a mixture of sriracha sauce too, make sure you add less hot sauce and a little more honey since it is hot enough already.
chef-hatAdjust the taste of sauce accordingly as per your liking.
chef-hatChicken pieces should be completely immersed in oil while frying.

    We love spicy, so I also added some cayenne powder to the coating, and used straight sriracha mayo, it was fab. We were in Waikiki only 3 weeks ago so helped keep the memories alive 🙂👍🏻
