PF Chang’s Dynamite Shrimp – this is such a mouth-watering-mood-lifter term! Don’t you guys agree? Ever since I have tried these, I have been searching for the recipe all over internet but no one has been successful enough to replicate the exact taste. However, recently I experimented a recipe after searching multiple blogs and sites. I didn’t have prawns at home the day I wanted to give it a try so i just made it with chicken, you can see the dish is not properly garnished as well (my bad). It turned out yummy, not exactly like PF Chang’s of course but quite close to it. Scroll down for step by step directions and enjoy the outcome!
About Dynamite Chicken/Shrimp: Fried spice-coated pieces of chicken/prawns served in a bed of sugary, tangy and zesty flavored sauce.

GET:
Cutting board
Knife
Some bowls and spoons
Skillet/Pan for frying
Kitchen tissues
SET:
Chicken Breasts 500 gms
Oil for frying
Spring onion (for garnishing – optional)
Batter Ingredients:
All purpose flour 1/2 cup
Cornflour 1/4 cup
Rice flour 1/4 cup
Garlic paste 1 tsp
Salt 1tsp
Black Pepper 1tsp
Paprika powder 1 tsp
Soya sauce 1 tbsp
Egg 1
Cold Water as required
Coating Ingredients:
All purpose flour 1/2 cup
Cornflour 1/4 cup
Rice flour 1/4 cup
Salt 1tsp
Pepper 1tsp
Garlic Powder 1tsp
Dynamite Sauce Ingredients:
Mayonnaise 1/2 cup
Sweet Chili Sauce 3 tbsp
Hot Sauce 4 tbsp
Honey 1 tbsp
Garlic Powder/Paste 1/2 tsp
Vegetable Oil 1 tsp
Vinegar 1 tsp
GO:
Cut Chicken breasts in thin bite-size slices.
Mix all the batter ingredients in a bowl, add chicken pieces and set aside for 5-10 mins.
Mix the coating ingredients in a separate bowl, set aside.
Transfer the chicken pieces from batter bowl to coating bowl, layer them well.
In a separate bowl, blend the dynamite sauce ingredients until smooth.
Heat oil on medium flame until it is hot enough for frying .
Fry the coated chicken pieces until the colour changes to light golden.
Remove excess oil by putting them on kitchen towel.
Transfer the chicken pieces to serving bowl/dish and pour the dynamite sauce over them.
Garnish with spring onion (optional) and serve.
MY TWO CENTS:
You can use the same recipe with prawns and fish. My next try is definitely gonna be with prawns.
If you don’t have sweet chili sauce; you can use a mixture of sriracha sauce too, make sure you add less hot sauce and a little more honey since it is hot enough already.
Adjust the taste of sauce accordingly as per your liking.
Chicken pieces should be completely immersed in oil while frying.

Which pepper in the batter yasi.. Black or red chilli peppers?

I used black pepper emma. sauce has already too much spice, we are adding black pepper to add a little hotness in the taste too 🙂

We love spicy, so I also added some cayenne powder to the coating, and used straight sriracha mayo, it was fab. We were in Waikiki only 3 weeks ago so helped keep the memories alive 🙂👍🏻
