Last week, I hosted a lunch and, as always, made this recipe as the vegetarian option on the menu. Among the guests was a friend’s mother visiting from Pakistan. When she saw her daughter filling her plate with these baingans, she looked genuinely surprised. The conversation (in Urdu) went something like this:
Mother: tum baingan kha rai ho? (You’re eating baingan?)
Friend: ji (Yes)
Mother: Tum to ghar pe nhi khati thein… (You never used to eat those back home!)
Friend: Q k ap aisy nhi banati thein. (because, you never made them like this) 😀
Not just them, everyone loved the Borani Banjan and asked for the recipe. Honestly, this has been happening at almost every dawat lately, and I don’t know why I’ve been sleeping on sharing it!
Believe it or not, I actually filmed this recipe almost over a year ago, but it somehow slipped into my archives and never made it out. This time, though, I gave myself a deadline, and finally, here we are!

We aren’t an avid fish eaters so whenever fish finds its way to our home along with the groceries, I try to make sure that it’s good enough to consume. Last week, I asked HI to bring some fish from the super market so that I can fix a quick dinner, he asked me which fish to bring and I told him “Any”. Like literally, I had nothing in my mind. Anyways, he brought Hoki and I was glad. I decided to air fry it not because had a healthy mean plan in mind but because I wanted to see how it’s done in it. Haha.

The last time I had Bun Kabab from ‘thela‘ (mobile cart) was 2 years ago, we were on a brief trip to Karachi, I was 7 months pregnant with Jucy Yusi and despite of clear instructions from midwife to eat only healthy food, I went ahead with consuming it coz how can you not have bun kabab when you are in Karachi? (I had to face the consequence after wards in the form of diarrhea but that’s another story). So, this lockdown, I started craving for bun kababs and the only way I could have them here (whether it’s lockdown or no lockdown) is to make myself. There’s no way out! Once you start craving anything, you’re trapped. You are the only one who can get you out, else it will keep haunting you. The irony. Anyways, with the craving increasing day by day, I gave in and made it so that I can move ahead with life.

I experimented these wings directly in the production environment ( i.e. in my Pizza parties- I have talked about one with a picture posted on Facebook and Instagram) without running them through a test one (which corresponds to testing out a dish at home before finalizing it as a menu item for any party). I was so sure that this is gonna be a hit (actually I think the same for every recipe I try… lol) and believe it or not this one did turn out to be THE HIT item on the table in the parties every single time. Which stimulated the huge demand for the said recipe and that is the reason I am uploading this before all the others which are waiting in the pipeline to be shared.
